3 cups of all-purpose flour
1/2 tsp salt
1 cup room temperature butter
1 cup of granulated sugar
1 egg
1 tbsp Vanilla Extract
1 tsp baking powder
1. Sift together flour, baking powder and salt.
2. In mixing bowl cream together butter and sugar until light and fluffy.
3. In a small dish, whisk together egg and vanilla extract. Gradually add the egg mixture to the creamed butter and sugar. Beat well.
4. In 3 additions, add the flour mixture. Beat slowly in a stand mixer until combined. You should have a cookie dough consistency.
5. Gather dough in a ball and shape it into a disk.
6. Roll out the cookie dough between two pieces of parchment paper and use your favorite cutters to cut out cookie shapes.
7. Preheat oven to 350F. Bake 10-11 minutes. Let cookies cool on baking sheet for 5 minutes before transferring them onto a cooling rack.
3/4 cup of warm water
5 TBL Meringue Powder
1 tsp Cream of Tarter
2.25 lbs of Powdered Sugar
1 TBL Pure Vanilla Extract
1 tsp Corn Syrup
Whisk the meringue powder, cream of tarter and warm water until foamy in a mixing bowl. Pour in powdered sugar on low speed until incorporated. Once incorporated, switch to medium to high speed for 10 minutes. Add the corn syrup and extract the last couple of minutes of mixing. Icing is done when it is thick, creamy with stiff peaks!
